Asian Chicken Salad – Easy Chicken Recipes on a Budget

Making things stretch is one of the best ways to plan out family meals without spending a fortune.

It’s amazing how many meals you can make with cheap ingredients and a little protein. Even for a large family!

Saving Money at the Grocery Store

While planning out your meals there are several things you can do to save money!

  • Make a list before you go! This is so important. Plan out the meals you want to make for the week. Add the ingredients and any other snacks or things you might need to last the week to take to the grocery store.

    You can make this list on your phone to make it easy, check things off as you shop.
  • Buy in bulk- Shop at stores like Smart & Final where you can buy in bulk. Buy things that can last for several meals. A large pack of tortillas, a big pack of chicken.
  • Purchase store brand items when you can. I’m a huge fan of First Street brand from Smart & Final. It’s good quality and they do come in bulk!

Three Meals with One Pack of Chicken!

I’m going to show you how you can make 3 family meals with 1 Smart & Final family pack of chicken!

These are meals I feed my family of 5 all the time. Family favorites!

You can easily stretch a large family pack of chicken to make these three meals.

Most of the family packs I have bought have 5-6 large chicken breasts.

  • Lightly season chicken breasts with salt, garlic salt, and pepper.
  • Grill or bake your chicken breasts and save in the fridge for each meal.
  • Use 1 1/2 chicken breast diced for this Asian Chicken Salad (Recipe Below), 1 1/2 chicken breast diced for these yummy Baked Chicken Taquitos, use 2 chicken breasts diced for this delicious Chicken Pesto Pasta!

Each of these recipes has cheap ingredients and are easy to make!

How can I make the best Asian Ramen Salad?

Asian Ramen Salad’s are so crunchy and delicious! I love the sweetness of the dressing and adding chicken to it to make it more filling.

This is one recipe my kids and husband love. So, it’s always in our dinner rotation! It keeps well in the fridge for leftovers the next day too.

Ingredients:

  • 1 1/2 – 2 grilled chicken breasts chopped or diced (You can also use a rotisserie chicken deboned)
  • 1 bag of cole slaw
  • 1 red bell pepper seeded and diced
  • 1/2 red onion diced
  • 1/4 cup slivered almonds
  • 1 package top ramen crushed (just the noodles)
  • 1 bottle Asian salad dressing

Instructions:

  1. If you haven’t already dice or chop your chicken into small bite sized pizza
  2. Pour your cole slaw into a large bowl
  3. Mix in chicken, bell pepper, red onion, slivered almonds, and crushed ramen
  4. Pour salad dressing over your salad mixture and mix until combined
  5. You can serve right away
