Super Easy Chicken Pasta Salad Recipe

It’s Frozen Food Month, so I thought it would be the perfect time to share my easy Chicken Pasta Salad recipe.

This is a recipe my grandma used to always make for special family get togethers. I always remember a huge bowl of pasta salad for Easter and summertime barbecues.

Although this pasta salad recipe is great for a side dish, it also is great on it’s own for lunch or a light dinner.

How can I make the best pasta salad with chicken?

Ingredients:

  • 2 frozen boneless chicken breasts cooked and shredded (I just put these in the pressure cooker with 1 cup of water, salt, pepper, and garlic for 12 minutes on medium pressure)
  • 1 lb rotini pasta
  • 1 lb frozen broccoli, cauliflower, and carrots mix thawed
  • 1 small can sliced olives drained
  • 1 small jar artichoke hearts drained
  • 1 dry Italian seasoning packet
  • 1 cup cubed cheddar or colby jack cheese
  • 1/2 red onion finely chopped
  • 1/2 bottle of italian dressing

Directions:

  1. Cook pasta according to package directions and allow to cool
  2. In a large bowl add pasta, broccoli mix, olives, artichoke hearts, cheese, and chopped onion.
  3. Stir together.
  4. On top of your pasta mixture add Italian seasoning packet and Italian dressing.
  5. Stir until combine. You can add more Italian dressing to your liking.
