German Potato Salad is one of those family favorite recipes that has never left.

It’s easy to make, feeds a large crowd of people, and everybody loves it. THIS makes it perfect for holiday weekends.

What should I bring to a Labor Day party?

What type of potato is best for potato salad?

If you are making potato salad I love using red potatoes or Yukon potatoes.

Both of these varieties tend to hold up a little better, but in reality you can really use any type of potato you’d like.

If you’re planning on using Russets make sure to peel the skin before boiling because it is thicker than red potatoes or Yukon.

In the recipe below I used Idaho Red Potatoes. They are a little bigger, but taste just as good!

Is potato salad supposed to be cold?

Potato salad is usually served up cold or room temperature.

But, there have been times we’ve cut up the potatoes warm and served it warm. It’s yummy either way!

How can I make the best German Potato Salad?

The best potato salad I’ve ever tried is my grandmas recipe below! It’s really easy to make with some secret touches that make it delicious!

Ingredients

  • 5 lb bag red potatoes boiled in a large pot until tender then diced
  • 5 hard boiled eggs peeled and diced
  • 1 cup celery chopped
  • 1/2 red onion diced
  • 1 can whole pitted olives
  • 1 lb bacon
  • 1 tbs red wine vinegar
  • 1/2 cup brown sugar
  • 1 cup mayonnaise
  • salt and pepper to taste

Instructions

  1. Add diced potatoes, hard boiled eggs, celery, red onion, and olives to a large bowl
  2. In a skillet cook bacon until crisp
  3. Reserve 1-2 tbs. of bacon grease in the skillet and whisk in red wine vinegar
  4. In a small bowl whisk mayo bacon grease together
  5. Whisk brown sugar into mayo mixture
  6. Chop up the bacon into small pieces
  7. Add the bacon and mayo mixture to the potato’s and stir, adding salt and pepper to taste
