Yummy Grilled Chicken Fajita Recipe | So Easy to Make!

A day outside grilling with the family makes for the perfect summer meal. One of my family’s favorites is my Grilled Chicken Fajita recipe.

I have to admit that one of the things I love most about grilling recipes is that my husband loves to grill. So, it takes some of the pressure off of me.

Plus the kids can run around and play outside while he’s grilling, so it’s a double break for mom.

What toppings go on fajitas?

Fajitas are fun and colorful because there are so many toppings you can use!

I normally try to get some colorful stir fry type vegetables and I love to use chicken to make it more light.

Here are some toppings you might want to add:

  • Bell Peppers (any colors)
  • Onions (red, white, or yellow)
  • Sour Cream
  • Cheese (Queso Fresco or Mexican Cheese)
  • Avocados, plain or made into guacamole
  • Chicken, shrimp, or beef

How can I make the best Grilled Chicken Fajitas?

Making grilled chicken fajitas is so simple! The prep only takes about 10-20 minutes. Throwing the chicken on the grill makes it that much faster.

Since we are making more dinners at home now, this is a great dish that makes us feel like we are eating at our favorite Mexican restaurant.

Ingredients:

  • 2 lbs. Foster Farms Simply Raised Air Chilled Chicken Breasts
  • 3 Bell Peppers Seeded and Sliced (We used red, green, and yellow)
  • 1 onion sliced
  • 4 tbs. olive oil
  • sour cream
  • avocado sliced
  • Fajita sized flour Tortillas
  • 1 tbs. salt
  • 1 tbs. cumin
  • 1 tsp. pepper
  • 1 tsp. chili powder
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. dry chopped parsley

Instructions:

  1. In a small bowl mix spices together to make a rub
  2. Brush chicken breasts with about 2 tbs. of olive oil
  3. Rub a little more than half of the spice mixture on chicken. Save the rest for the veggies!
  4. Place chicken breasts on a preheated grill. About 7-9 minutes per side with the lid open
  5. Meanwhile season your veggies and saute in a large preheated skillet with about 2 tbs. of olive oil until onions look translucent
  6. Pull chicken off the grill and warm tortillas on the grill, about 1 minute on each side
  7. Slice chicken breasts into short strips
  8. Assemble your fajitas on warm tortilla with chicken, sour cream, avocados, and veggies
