The Easiest Chicken Salad Sandwiches (Mother’s Day Brunch Idea)

If you are in quarantine and stuck at home, finding all the ingredients for a family meal can be frustrating. We’ve been sticking with go-to favorites that are easily adaptable like my Chicken Salad Sandwiches.

There are so many great tips I’ve found helpful when shopping during these times.

  • Look through your pantry and make a list of what you already have to work with before making a grocery list.
  • Shop essentials that are versatile for many recipes like rice, beans, tortillas, flour, etc.
  • Take advantage of stores like Smart & Final where they sell things in bulk. I just found a 25 lb. bag of flour at our local Smart & final, which will last us for months.
  • Find recipes that can be easily adjusted. Trading out bread for tortillas, different dressings, or ingredients that can be substituted.

Advantages of Shopping Pantry Items at Smart & Final

Like I said, pantry items are easy to find at Smart & Final. Often times you can find them in bulk or family sizes.

This means less trips to the store and a stocked up pantry that will last longer for your family meals and snacks.

I separated my huge 25 lb. bag of flour into freezer bags to store in our freezer for baking and cooking when we need it.

For my Chicken Salad Sandwich recipe below I used First Street canned chicken and croissants. Both great pantry staples to get for dinners.

How can I make the best Chicken Salad Sandwiches?

This chicken salad sandwich recipe is easy to put together and versatile.

You can switch out the croissants for any bread, tortillas, or wraps. Mayonnaise can also be substituted for greek yogurt.

It’s a great idea for a holiday family meal or Mother’s Day brunch meal.

Ingredients:

  • 4 10 oz Cans Chicken drained
  • 1 cup red or black seedless grapes sliced
  • 1/2 cup slivered almonds or chopped walnuts
  • 1/2 cup mayo or greek yogurt
  • 1/2 red onion diced
  • salt & pepper to taste
  • Croissants sliced in half

Instructions:

  1. In a large bowl mix all ingredients
  2. You can add or take away mayo depending on how creamy you like your chicken salad
  3. Add chicken salad to sliced croissants to make sandwiches or put it in a tortilla or sandwich wrap for wraps
