How can you make crispy chicken taquitos in the oven?
Keeping taquitos crispy is so easy when you bake them! I just love that crunch you get from baking this Mexican dish in the oven.
Baked Chicken Taquitos are an easy dinner or party idea that are even great for leftovers.
If you have kids this recipe can easily be adapted for picky eaters. You can definitely take out the onions. *A few of my kids aren’t onion fans!
Here’s how to make them!
Ingredients:
Corn Tortillas
2-3 Large Chicken Breasts Grilled or Baked
1 cup shredded cheddar cheese
1 8oz pack of cream cheese
1 4oz can of diced green chiles
1 diced yellow onion
2 tbs. olive oil
Salsa (optional)
Sour Cream (Optional)
Chopped Cilantro (Optional)
Pico De Gallo (Optional)
Queso Fresco (Optional)
Pinch of salt and pepper
Instructions:
Grease a large baking sheet. Preheat your oven to 400 degrees.
Chop up your grilled chicken and set aside.
In a large skillet sauté your onions in 1 tbs. olive oil until golden brown. Sprinkle with a pinch of salt and pepper.
Add your green chiles to the skillet and sauté for a few minutes.
Slice your cream cheese into smaller pieces and add it to the skillet, cooking until it’s melted. Stir frequently so it doesn’t burn.
Add your chicken to your cream cheese mixture and stir together.
Warm your tortillas for a few minutes in the microwave under a slightly damp paper towel.
Add about 1/4 cup of your chicken mixture to each tortilla, sprinkle a pinch of cheese inside, and roll.
Add your tortilla roll to a greased baking sheet with the crease side facing down.
Brush or drizzle the remaining olive oil evenly on top of the taquitos before putting them into the oven. This really helps them get crispy!
Bake in the oven at 400 degrees for about 40-45 minutes or until golden brown on top.
Garnish with sour cream, Pico de Gallo, chopped cilantro, queso fresco, and/or salsa!
