My favorite homemade back to school snack has to be Peanutty Peanut Butter Protein Balls.

In two tablespoons of peanut butter (about 2 protein balls) you get 8 grams of protein, 2 grams of fiber, and 12 grams of unsaturated fat.
Such a great way to get picky kids to get some protein and fiber in their diet.

One of the things I love about peanut butter protein balls is how easy it is to store them. They will last about a month in the fridge and even longer in a freezer bag in the freezer.
They taste better to me after being chilled overnight and if they stay in the fridge it will keep them fresh and tasting good!
