Easy Peanutty Peanut Butter Protein Balls | Back to School Lunch Idea

My favorite homemade back to school snack has to be Peanutty Peanut Butter Protein Balls.

The ingredients are cheap, it’s easy to make, and my kids love it! It’s easy to sneak a powerful ball of protein in them before school because they are so delicious that even my pickiest eater will gobble them up!

Peanut butter balls are small enough to fit into a lunch bag or take along on a road trip or picnic lunch. They are easy to store for an after school snack too.

Are peanut butter protein balls good for you?

There are so many health benefits to the peanut butter in peanut butter protein balls.

In two tablespoons of peanut butter (about 2 protein balls) you get 8 grams of protein, 2 grams of fiber, and 12 grams of unsaturated fat.

Such a great way to get picky kids to get some protein and fiber in their diet.

This nutrition boost will help your kids energy levels at school, during homework time, and during weekends on the go!

Our daughter has dance class 2 nights a week and I love taking these along to get her through.

How long do peanut butter protein balls last in the fridge?

One of the things I love about peanut butter protein balls is how easy it is to store them. They will last about a month in the fridge and even longer in a freezer bag in the freezer.

They taste better to me after being chilled overnight and if they stay in the fridge it will keep them fresh and tasting good!

What are Peanutty Peanut Butter Protein Balls made of?

Peanutty Peanut Butter Protein Balls are so easy to make for your kids. They take practically no time at all and your kids can hop in and help out with the mixing and rolling up balls.

Ingredients

  • 1 cup peanut butter
  • 1 1/2 cups plain dry oatmeal
  • 1/3 cup coconut
  • 1/4 cup honey
  • 1/3 cup mini chocolate chips
  • 1/4 cup Chia Seeds
  • 1 tbs vanilla extract
  • 1/2 cup peanuts chopped (you can crush them in a plastic bag with a rolling pin or give them a few chops in a food processor)
  • Add Oats
  • Add Peanut Butter
  • Add Honey
  • Add Coconut
  • Add Chia Seeds and Chocolate Chips
  • Add Vanilla Extract
  • Mix it up
  • Roll Balls in Crushed Peanuts

Instructions

  1. Add all ingredients in a medium mixing bowl
  2. Stir ingredients with a rubber spatula or wooden spoon until combined
  3. Scoop out balls with a melon baller or roll with your hands
  4. Roll balls in crushed peanuts
  5. Put completed balls in a freezer bag or on a nonstick cookie sheet. Let them chill in the fridge for 1-2 hours before eating.
Yield: 12 protein balls
