How do I make fluffy cream cheese pancakes?

Ingredients: 

  • Fresh Berries
  • First Street Double Berry Cheesecake Ice Cream (Find this at Smart & Final)
  • 1 stick of Cream Cheese softened
  • 2 Cups Flour
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 1 tsp salt
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 stick melted butter
  • 1 3/4 cups milk
  • boysenberry syrup

Instructions:

  1. Beat together sugar and cream cheese until fluffy
  2. In a separate bowl combine flour, baking soda, powder, and salt
  3. Slowly mix flour mixture into cream cheese mixture
  4. Mix in eggs, vanilla extract, and melted butter
  5. Slowly mix in milk
  6. Cook pancakes for 2-3 minutes on each side on a greased griddle or skillet
  7. Let cool for 10 minutes then serve with a scoop of Double Berry Cheesecake Ice Cream and boysenberry syrup
  8. Garnish with berries!
