It’s family meals month and my family loves a good Mexican food dinner. One of our favorites are chimichangas, which can be hard to make, but so much easier with my Baked Chimichanga recipe!

How can I save money on family dinners with Smart & Final?

What are chimichangas?
Typically chimichangas are fried burritos filled with chicken, beef, or pork (chile verde). You can serve them with a variety of toppings inside and out, including cheese, salsa, guacamole, and sour cream.
While traditional chimichangas are fried we like to bake them at home, it’s easier and definitely healthier than frying.
You get that same crispiness and it saves time and the mess.
How can I make the best oven baked chimichangas?
As I said before, these chimichangas are so simple to make. This recipe is great for a family on a budget because I use ground beef instead of steak, chicken, or pork.
Once you have your filling set up and are ready to assemble, you just put them together, stick them in the oven, and they’re done.
If you are quick with your prep you can have this meal done in 30-40 minutes!
Ingredients:
- 10-12 large tortillas
- 1 cup Spanish rice prepared (I usually get 1 or 2 microwave steam pouches)
- 1 can pinto beans
- 2 cups shredded cheddar or cheddar jack cheese
- 2 tbs butter
- 1 lb ground beef
- 1 onion finely diced
- 2 cloves of garlic minced
- 1 tbs. Mexican seasoning
- Salt to taste
- Guacamole, salsa, and sour cream optional toppings
Instructions
- Preheat oven to 400 degrees
- Brown ground beef with diced onion and garlic.
- In a large bowl combine prepared Spanish rice, pinto beans, and ground beef mixture.
- Before assembling warm your tortillas and spread butter on each one. You can also soak them in melted butter.
- Assemble each chimichanga burrito style. Add a scoop to the center of each tortilla and then place on a large baking sheet.
- Bake chimichangas at 400 degrees for 15-18 minutes or until golden brown on the top and edges.
- Serve with guacamole, salsa, and/or sour cream on the side.
