Usually I am not a snacker, but now that I am nursing my newborn baby who has me up all night most nights, I am starving all the time!
All this snacking could definitely get out of hand and I am trying my best to eat a bit healthier and hopefully get some baby weight off.
Since I’m sleep deprived pretty much all the time it helps eating healthier because I feel more energized eating healthy foods.
One of my biggest weaknesses on the weekends is chips and dips.
Oh, I could totally go for a 7-layer bean dip right now!
Last weekend I made my own spin on the 7-layer bean dip, so I could have something healthier and creamy to dip my chips in.

Lighter Creamy Red Bean Salsa
If you’re like me and crave chips and dips on the weekend then this salsa is a good healthier option.
I swear it reminds me of a 7 layer bean dip, only more flavorful. You can have that creamy taste and the red beans are a perfect replacement for re fried beans.
For a salsa it’s really on the mild side, which is good for me because I don’t do spicy well. (Heartburn!)
With the addition of corn, cilantro, and other fresh ingredients it’s just so yummy!
Aside from snacking, this would be great to serve at a party or family get-together.

Here’s What You’ll Need:
- 1 Can S&W Premium Kidney Beans – drained and rinsed
- 1 Can Whole Kernel Corn -drained (We used S&W corn too!)
- 2 tbs. Chopped Cilantro
- 2 tomatoes diced
- 1 jalapeno pepper (remove seeds and dice)
- 1/2 Red Onion Diced
- 1/2 Cup Plain Greek Yogurt
- 1/4 Cup Sour Cream
- 1 tsp. Cumin
- 1 tsp. Cayenne Pepper
- 1 tsp. Garlic Powder
- Salt & Pepper to taste
Here’s What To Do:
- In a medium bowl mix beans, corn, chopped cilantro, and diced veggies
- In a separate bowl combine sour cream and yogurt with seasonings
- Stir together with your bean mixture
- Taste and add salt & pepper as needed
